Watermelon salad
This watermelon salad is a surprisingly fresh counterpart to a grilled meal or summer barbecue. The sweet cubes of watermelon are marinated in a dressing of lime, honey, soy and sushi vinegar, creating an exciting balance of sweet, sour and umami. Topped with spring onion, jalepeno, sesame seeds and optional shiso purple, this dish is not only a feast for the taste buds but also for the eyes.

Ingredients:
- Β½ watermelon, diced
- juice of 2 limes
- 2 tbsp. honey
- 1 tbsp soy sauce
- 1 tbsp sushi vinegar
- 2 spring onions, cut into fine rings
- 1 jalapeΓ±o, thinly sliced
- a few leaves of shiso purple (optional)
- fresh cilantro, to taste
- 2 tbsp sesame seeds
1. Dressing
Mix the lime juice, honey, soy sauce and sushi vinegar to make a fresh dressing.
2. Marinate
Add the cubed watermelon and marinate briefly.
3. Garnish and serve
Garnish with spring onion, jalepeno, cilantro, sesame seeds and optional shiso puree. Serve immediately.
