Ingredients
Chicken Thighs
- 500 g chicken thighs, skin-on
- Chicken rub of your choice
- Thinly sliced spring onions
Avocado-Bacon Mayonnaise
- 2 avocados
- 1 small white onion
- 80 g crispy bacon slices
- 1 large garlic clove
- Juice of ½ lime
- 4–5 tablespoons mayonnaise
- ½ tsp smoked paprika powder
- Salt and pepper, to taste
1. Prepare the Avocado-Bacon Mayonnaise
Remove the flesh from the avocados. Roughly chop the onion, peel the garlic, and cut the bacon into smaller pieces. Place the avocado, onion, garlic, bacon, and lime juice into a blender and blend until smooth. Add the mayonnaise and season with smoked paprika, salt, and pepper to taste.
2. Prepare the Chicken Thighs
Trim the chicken thighs neatly and season generously with your preferred chicken rub. Let the seasoning absorb briefly while the barbecue heats up.
3. Grill the Chicken Thighs
Grill the chicken thighs on the barbecue until they reach a core temperature of at least 74°C (165°F). Ensure the skin becomes beautifully golden brown and crispy during cooking.
4. Serve
Arrange the grilled chicken thighs on a serving plate and generously spoon the avocado-bacon mayonnaise over them. Garnish with thinly sliced spring onions and, if desired, some finely chopped crispy bacon for extra crunch.
