Creamy Limoncello cottage cheese ice cream  

Ice cream can be made with or without an ice cream machine. In this blog we will discuss how to make ice cream yourself with the ice cream machine (Boretti Gelatiera Ice Cream Machine). When it comes to making classic ice cream, the best results are achieved with an ice cream machine. The machine ensures that the ice cream freezes and mixes at the same time, this keeps the number of ice crystals low and the ice cream becomes soft and creamy. The desired result. Without an ice cream machine, the likelihood of ice crystals increases significantly because it is done manually. An ice cream machine makes it easier to make your own ice cream, less hard work and a lot faster.  

For the real ice cream fanatics, we will happily share this recipe with you! In our Experience Center we are constantly testing our kitchen equipment, because we love to cook.   

Recently we started experimenting again with our Boretti ice cream machine Gelateria and came up with the idea to make creamy limoncello ice cream. Read below what we used for this. 

Cooking utensils:  

  • Ice cream maker (we use the Boretti Gelateria)  

  • Whisk  

  • Silicone Spatula  

  • Grater  

  • Bowl  

  

Ingredients:  

  • 250ml whipped cream  

  • 450ml cottage cheese  

  • 60 gr white caster sugar  

  • Limoncello  

  • 2 lemons  

  

Preparation:   

Mix the caster sugar and the whipped cream, and beat until smooth and runny.   

Add the cottage cheese and mix well.  

Juice half a lemon and grate two lemons. Only add the yellow of the peel to the mixture.  

Then it's time to add perhaps the tastiest ingredient of all: two generous shots of Limoncello.  

Place in the fridge for an hour to allow the flavours to infuse.  

After an hour in the fridge, the mixture can be poured into the ice cream maker.  

Let it run for an hour and after an hour you have delicious Limoncello ice cream!  

  

Tips!  

Alcohol does not freeze as quickly as water and therefore keeps the ice cream nice and smooth.   

Note: if you add too much alcohol, the ice cream will remain too soft. As long as the alcohol percentage is less than 40%, you'll be fine.   

If you're not going to serve it right away, put the ice cream in a plastic container and keep it in the freezer. Remove the it from the freezer 10 minutes before serving and make nice balls of ice cream with the ice cream scoop.
